Mocha is the happy marriage of two of my favorite things: chocolate and coffee. This is my go-to snack when I need a chocolate fix, with the added boost of coffee to perk me up. The texture is somewhere between a brownie and a cake. It makes enough for a delicious and satisfying serving for one.
1 Tablespoon butter (or use coconut oil )
4 Tablespoons brewed coffee
2 Tablespoons unsweetened cocoa powder
2 Tablespoons brown sugar (I use Splenda brown sugar blend)
6 Tablespoons all purpose flour
1/4 teaspoon vanilla
1/4 teaspoon baking soda
Stir all ingredients together in microwavable bowl or large mug. Microwave on high for 2 1/2 to 3 minutes. Eat warm. This is great plain, or topped with ice cream, berries or a dusting of powdered sugar.
