Recipe: Microwave Baked Apple
Enjoy apple pie taste without all the work! This snack is easy to make, and cooks quickly in the microwave. I’ll admit I was at first skeptical of how well an apple would “bake” in the microwave, but I’m a believer now!
1 apple (suitable for cooking — Honeycrisp, Jonagold, Spartan, Rome — will retain their texture rather than become mushy)
1 tsp butter or margarine
1 tsp brown sugar (I save calories by using Splenda Brown Sugar Blend)
1/4 tsp ground cinnamon
Remove the apple core, leaving a little intact at the bottom so the yummy flavor doesn’t leak out. Place the apple in a microwave safe bowl. Put brown sugar, spices and butter in the center of the apple. Microwave on high for 2 1/2 – 3 minutes. Toss the core outside for the squirrels, grab a fork and enjoy!
note: I get lazy and remove the entire core with a handy corer tool. This does not alter the cooking or taste. It just makes the liquid form a pool at the bottom of the bowl.
